The Kaaswaag, or Cheese Weigh-house is an interesting building overlooking the Kaasmarkt (Cheese Market) in Edam. It features some decorative panels which depict a bull on a red field with three stars – this design is the town’s coat of arms. The cheese market has been running in Edam since 1745, and the Kaaswaag was built in 1778. The market stopped running for a while in 1922, and the Cheese Weigh-house now features a permanent exhibition about the production of cheese.
